When my mother offered me her mini bundt cake pan I immediately envisioned tiny Mickey cakes on a plate. Though I love to cook, I don’t often bake and before this I had never worked with melted chocolate. It definitely requires practice! When I do bake I always use organic ingredients, including organic milk and free-range eggs. I also like to substitute butter for oil. Organic butter gives the cake a denser texture and a richer flavour.
As per my mother’s instructions I melted the baker’s chocolate with butter in a bowl over a pot of simmering water. I dipped the mini Oreo cookies first, then placed them on parchment paper for the chocolate to cool and set. To create the Mickey bundt, I dipped the top of the finished mini cakes into the chocolate, then set the cooled mini Oreos in place.
